Old Recipe for Beef Cobbler

Ingredients

1 ½ lbs stewing steak cubed
1oz of flour
½ tsb of dried thyme
½ tsb of salt & pepper
1oz of dripping
2 medium onions, peeled & sliced
1 ½ pints of water
1 tbs of tomato puree
1 tin of red kidney beans drained
3 Carrots scrubbed & sliced

Method

In a flame proof casserole dish melt the dripping and gently fry the onions until golden. Season the flour with salt, pepper & thyme, and then sprinkle over the beef. Then add to the onions and stir fry until brown. Stir in the water and puree, add the carrots and bring to the boil. Cover and simmer for 20 – 25 minutes or bake in the oven at 325 deg F or 170 deg C or gas mark 7. Remove and add the kidney beans.

Topping Dough

Ingredients

8 Oz of Self Raising Flour
1 Tsb of Salt & Pepper
½ TSb of Mixed Dried Herbs
3 Tbs of Cooking Oil
¼ Pint of Milk
11/2 Oz of Porridge Oats

Method

Sieve together the Flour, Salt, Pepper & Herbs in a bowl. Add the Oil & Milk & mix to a soft dough. Roll small balls of dough in the oats & place on top of casserole, and then bake in the oven at 375 deg F, 190 deg C or gas mark 5, for 10 – 15 minutes until the topping is firm & golden.
